Coconut oil is made by saponifying, acidifying, washing and dehydrating coconuts. Coconut oil is a vegetable oil, but the saturated fatty acid content is as high as 80% to 90%, which is much higher than other common vegetable oils.
The main saturated fatty acid in coconut oil is lauric acid, accounting for 47% to 54%. In addition, it also includes 18% myristic acid, 10% palmitic acid, 2% stearic acid, etc.
